Quinoa Revisited + Burrito Bowls
It turns out that my taste buds just hated quinoa for breakfast. I had the ingredients for a burrito bowl, so I tossed in my leftover quinoa (thanks for the tip, Hillary!). And guess what?
It was fabulous.
Imagine that! You just can't go wrong with cilantro and black beans.
Burrito bowls are easy to have for lunch or dinner when you're in the mood for something fresh and flavorful, yet hearty and filling. We've made them with all kinds of ingredients and have never been disappointed.
Burrito Bowls
Saute:
diced red onion
drizzle of olive oil
Add one or all of the following:
cooked quinoa or brown rice
black beans, drained
leftover grilled meat, shredded
Season with your favorite stuff:
taco seasoning (have you ever made it from scratch?)
Mexican chili-lime seasoning (Chad's favorite; we use Tajin)
S&P
Serve in bowls, garnished with a few of these:
bell peppers
cilantro
a squeeze of citrus
Greek yogurt
cheese*
chopped leafy greens
tomato
avocado
pico de gallo
guacamole...
What else would you add?
*Would you believe that adding cheddar to this actually almost ruined it for me? When I saw it on my spoon, I realized I had added it to my bowl out of habit, not out of need.
Look at that! This girl has cured herself of an addiction to cheese!
I believed it to be impossible.
Animal products as a garnish instead of a main event really is the best way to go.
