Lemony Leftovers for Lunch
Just a quick drop-in to say: Leftovers are my favorite lunches. Especially leftover salmon.
We roasted some sallllmon last night. Smothered in butter and lemon juice. And despite our northwestern need for exorbitant helpings of seafood, there was extra. Which I stored in foil and placed safely in the refrigerator until lunchtime today.
And what a lunchtime it was.
Roasted salmon*, cold.
Whole wheat spaghetti, al dente.
Fresh lemon juice, generously squirted.
Parmesan cheese, sprinkled (dumped?) all over.
Sea salt and freshly cracked pepper, plenty.
Tossed together and eaten in large forkfuls.
I had two big helpings.

*To roast salmon: place fillets on baking sheet lined with foil. Slice butter, squirt lemon juice, and sprinkle S&P over each fillet. Roast at 400 degrees F for about 15 minutes.
